Great recipe from Richard Bertinet, but I divided it to a smaller portion for my needs. Also make some changes, like adding sugar and oil into the recipe.
At beginning, the dough was very wet and a bit difficult to knead but slowly it will become more smooth and not sticky (if kneading by hand like me). Or you may use a mixer to done the job. I also attached a video which show how's my burger buns are ready fermented to bake in the oven.

Fermentation test on buns if buns is ready to go into oven. The bun will not collapse when you press on it.
ingredients: (make 6 medium size buns)
250g bread flour
180g water
1 tsp instant dry yeast
1 tsp sugar
1/2 tsp salt
1 tbsp oil
- combine all except oil in a bowl & start kneading by hand
- use flip & drop kneading method to knead the dough
- after kneading 15 minutes, rub oil into dough
- kneading for another 5-15 minutes until dough become smooth & develop gluten
- rest & cover dough in a warm place for 1 hour fermentation, or double in size
- when times up, punch air out from dough
- divide dough into 6 portion, roll into balls, rolled balls with sesame seeds
- place on a pan, I like to put buns into my oven for fermentation, 1 hour or double in size
- take out pan from oven, preheat oven at 180C
- spray water on the fermented dough, put into oven to bake for 12-15 minutes or buns turning brown
- cool before store in a zip lock bag or container after cool
To make this delicious fish burger, you need:-
1 piece fish patty
1 - 2 slices cheddar cheese
mayonnaise
ketchup or chili sauce
lecttuce
1 homemade burger buns
butter
- split burger bun & spread some butter on both side
- heat pan in medium heat, grill buns until light brown, set aside
- add some oil to fried fish patty until brown & crispy, drained & set aside
- spread some mayo on both side of bun, top with fish patty, cheese lecttuce & ketchup or chili sauce
- serve!
