stir-fried Di Huang Miao / Emperor Vegetables 清炒帝王苗


This is a super simple stir-fried vegetables, simply fried with garlic. It is one of our home grow vegetables in our small backyard garden. This plant call Basella alba or Malabar Spinach.


Basella alba is a fast-growing, soft-stemmed vine, reaching 10 metres (33 ft) in length. Its thick, semi-succulent, heart-shaped leaves have a mild flavour and mucilaginous texture. It is rich in vitamins A and C, iron and calcium. It has been shown to contain certain phenolic phytochemicals and it has antioxidant properties. (Adapted from Wikipedia)


Here's the fresh pick from our garden! Green and shinny, you do not need to put any starch to cook this vegetables, because it will become little bit sticky or starchy after cooked.

Only pick the young vine and leaves to cook.

ingredients:

Di Huang Miao / Basella alba
2 cloves of garlic, minced
water
pinch of salt
pinch of sugar

  1. heat pan with some oil
  2. add minced garlic, sautee until fragrant after add in Di Huang Miao
  3. add some water, cover pan for 2 minutes, to let the steam to cook the veges
  4. add in salt & sugar, stir-fry for another 1 minute. Serve!
