home make barbecue pork (bak kwa) 自制肉干


Love to eat barbecue pork aka Bak Kwa or Long Yok, don't know why, chinese always buy Bak Kwa during CNY as their CNY treats. I very seldom buy during normal days but definitely will buy a pack or two on before Chinese New Year.



I try to make my own Bak Kwa. Not hard to make but easy if you know the tricks to make it like what you buy from Bak Kwa shop. I had try to do a small batch at the beginning, learn how to do it and learn what can't do during the process. This post I was using 600g of pork mince and what I get after roasting is only weight 350g!!! Almost 50% less the original weight, that's why Bak Kwa was expensive now.

It taste more delicious after overnight! Every time I pass by and look at my Bak Kwa container, I can't resist and take a piece to eat! So you will know how good it is! I really satisfy on this recipe!




Let's make a healthy without preservative, without worry Bak Kwa for your family to enjoy! 


Ingredients:

600g minced pork 猪肉碎
2 tbsp oyster sauce 蚝油
2 tbsp light soy sauce 生抽
1/8 tsp dark soy sauce 老抽
130g fine sugar 细糖
1/2 tsp Rose distilled spirits 玫瑰露酒
a drop of red food colour (optional)

Sugar mixture: (for brushing) 
麦芽糖水
2 tbsp wheat sprout sugar 麦芽糖 +2 tbsp sugar糖 + 2 tbsp water (combine and melt)


For easy to mix, put in minced pork into a big bowl. 
Add oyster sauce, light and dark soy sauce and sugar, combine well. 
Chill and marinate for at least 2 hours.
为易于混合,将肉末放入大碗。加入蚝油,生抽老抽, 玫瑰露酒 和糖,拌匀。
冷腌至少2小时。

Preheat oven at 100C. Line your pan with aluminium foil, spread and 
press pork evenly. Bake for 15 minutes or until pork can be lift up a piece.
烤箱预热100度。肉平均铺好, 烤15分钟或直到猪肉可以举起一块。

Peel aluminium foil and brush meat with sugar mixture on both side. 
Cut meat to your desired size.
剥离铝箔,在两侧肉糖水。

Preheat oven at 220C, like barbecue, put meat on wire rack, put bottom with 
a bigger pan to prevent oil & sauce leaking to your oven during barbecue. 
Bake meat for 10 minutes each side.
烤箱预热220C,如烧烤,把肉放在架子上,把底一个更大的锅,
防止油泄漏你的烤箱中烧烤。每面烤10分钟。
