pan-grilled lemongrass chicken 香茅煎鸡块


This is my latest new dish in our delicious menu - pan-grilled lemongrass chicken! Full of lemongrass, fish sauce and a mild sweet flavor chicken. I was inspired by those famous Vietnamese lemongrass chicken. Son's commented - it was very delicious and he love it!




I added some own grown lemongrass, they didn't grow big this time, just a tiny stick available. I will try to put more lemongrass in my next cooking. Overall this lemongrass chicken was very tender, juicy and fragrant.

ingredients: (serve 2-3 pax)
1 chicken breast with skin, cut to small peices
8-10 sticks lemongrass, finely chopped (balance of the sticks to be pounded)
2 cloves garlic, shredded
2 shallots, shredded
1/2 inch ginger, shredded
1 tbsp fish sauce
2 tsp brown sugar
1/3 tsp salt
1/2 medium onion, cut to strips



combine all ingredients in a bowl, marinate for 15 minutes or more



on high heat, lightly oiled the pan, once pan is hot, add in all ingredients
do not flip over immediate, let it grill for few minutes until golden brown
turn & flip the chicken carefully & continue grill until both sides are golden brown
garnish plate with some iceberg lettuce strips & serve with rice
