chinese chive and shrimps fritters 香脆韭菜炸虾饼


This is an old time snack, sell by an old lady when I was young. Love it, never thought I will make this. I brought back some chinese chive from my mom house. She grew it in a big square pot, grew very well & big.




ingredients: (makes 15 small pieces)

a handful of chinese chives
1/2 cup small white shrimps
4 tbsp all purpose flour
1 tbsp cornflour
1/2 tsp baking powder
1 egg
2 - 3 tbsp water
1 tsp salt
1 tbsp oil

  1. cut chinese chives into short length about 1cm
  2. combine all dried ingredients into a mixing bowl
  3. add egg, water & oil to mix into a batter, lastly add in chinese chives
  4. heat pan with oil for frying
  5. use a big spoon (for scooping soup), add it into the pan to heat up
  6. scoop some batter into the big spoon, lastly add a shrimp on top of the batter
  7. fry the spoon with batter, soon the batter will float up 
  8. keep frying the fritters until golden brown
  9. continue with step 5 to 8 to finish the batter
