This is an old time snack, sell by an old lady when I was young. Love it, never thought I will make this. I brought back some chinese chive from my mom house. She grew it in a big square pot, grew very well & big.
ingredients: (makes 15 small pieces)
a handful of chinese chives
1/2 cup small white shrimps
4 tbsp all purpose flour
1 tbsp cornflour
1/2 tsp baking powder
1 egg
2 - 3 tbsp water
1 tsp salt
1 tbsp oil
- cut chinese chives into short length about 1cm
- combine all dried ingredients into a mixing bowl
- add egg, water & oil to mix into a batter, lastly add in chinese chives
- heat pan with oil for frying
- use a big spoon (for scooping soup), add it into the pan to heat up
- scoop some batter into the big spoon, lastly add a shrimp on top of the batter
- fry the spoon with batter, soon the batter will float up
- keep frying the fritters until golden brown
- continue with step 5 to 8 to finish the batter
