hainan chicken rice 海南鸡饭


Awesome day with delicious lunch... hainan chicken rice! The chicken meat is so tender and smooth with fragrant rice and tasty chili sauce plus a nice bowl of chicken vegetables soup.


This is our lunch for the day. My husband who request to cook hainan chicken rice for the day because we never get to eat a "nice" hainan chicken rice for a long time (in our neighbourhood). I only use two large whole chicken leg as we really not able to eat the whole chicken by our self.




ingredients:- (serve 2-3 pax)


for hainan chicken:-

2 large whole chicken leg
water (enough to cover the chicken in a pot)

**Remaining water after cooking /soaking the chicken can be use to cook for vegetable soup!

  1. high heat to boil the water
  2. turn to low heat after water boiled & put in chicken drumstick, covered & let simmer for 40 minutes or more if you have a bigger drumstick
  3. insert a skewer into the thickest part of the chicken to check if the chicken is cook, no "blood water" shows then chicken was cooked
  4. prepare a big bowl of ice water for the chicken to have a nice ice bath for 5 minutes
  5. deboned the chicken & cut the chicken in pieces, put on a plate & set a side
  6. pour 1 or 2 tbsp of chicken soy sauce dipping onto the chicken before serving!

做法:
  1. 大火,煲开水
  2. 关小火,放鸡腿,盖上,让鸡慢慢煨熟。大概40分钟。
  3. 用牙签插在鸡最厚的部分来检查,没有“血水”显示鸡已熟。
  4. 准备一个大盘冰水,给鸡一个5分钟冰浴。
  5. 去骨, 切块。
  6. 食用前,淋1-2大匙“特自鸡酱油”就可以了!

for an easy homemade fragrant rice:- 海南香饭

2 cups rice
1 inch ginger, smashed
4 pcs pandan leaves, knot
1 small turmeric or 1/4 tsp turmeric powder
1/2 tsp salt
1 tsp fried garlic oil
3 cups chicken soup (from "leftover water" to cook chicken)


  
Direction: 
  1. Rice cooker method, wash rice twice, drained.
  2. Add 3 cups of chicken soup, add in lemongrass, turmeric, pandan leaves, salt & fried garlic oil and press start to cook the rice.

for the ginger dipping: 姜茸
2 inches of ginger
some sesame oil
salt
  1. pound or blend fresh ginger until fine
  2. add salt & sesame oil & mix well

for chili dipping: 辣椒

3-5 red chilies
2 cloves garlic
white vinegar / lime juice
salt
  1. blend chilies & garlic until fine
  2. add salt & vinegar to taste

for chicken soy sauce dipping: (the the kids) 
特自鸡酱油
3 tbsp light soy sauce
1/2 tbsp oyster sauce
1 - 2 tsp sugar
1 tsp sesame oil
pinch of white pepper powder
  1. put all ingredients into a cooking pot, let simmer & until sugar dissolved
