Crunchy peanut cookies 花生脆饼


Chinese New Year is in the corner, everyone is busy preparing for homemade cookies and home decorations. Is time for me to start baking for cookies for my family and friends.






Luckily I found this recipe at 下厨房. The cookies was so crunchy, buttery, taste good and easy to make.




Ingredients:

1/2 egg
110g butter (softened)
150g all purpose flour
80g fine sugar
1/4 tsp baking soda
1/2 tsp baking powder
160g toasted crushed peanut


 




  1. Combine and sift all purpose flour, baking powder and baking soda in a bowl
  2. In another bowl, whisk soften butter and sugar until a little pale and fluffy
  3. Add in egg and mix well
  4. Add in sifted flour, fold into butter mixture. Use spatula fold gently until no more flour seen in the mixture
  5. Cover dough with plastic and put into fridge for 1/2 hour
  6. Remove dough from fridge, roll dough into small balls (about 7-8g each balls)
  7. Roll balls with crushed peanut to coat evenly. Roll the dough with hand again to secure the peanuts coating
  8. Line the coated dough on baking pan, press lightly on top of the dough before baking
  9. Bake cookies at 180℃ for 15-18 mins or until the cookies is light golden brown
  10. Cool cookies before store in the container!
