easy roasted chicken 烤鸡


One pot dish, I throw all the ingredients in a roasting pan and wait for 45 minutes to get this yummy dinner prepared. I only use half of the chicken and a few potatoes and an onion for this simple and easy dinner. Economical and minimal cleaning! Haha... love it!



I got a total 45 minutes to rest time while waiting roasting the chicken in my oven. Totally work time saving! Make me feel want to make it again.


ingredients: (serve 3 pax)

half chicken (about 700g) - cut into pieces
3 large potatoes - sliced or cut to cubes
1 medium onion - sliced
1 large tomatoes - sliced
1 small carrot
1-1/2 tsp salt
2 tbsp brown sugar
3 tbsp tomato sauce
2 tsp malt vinagar
some pepper
dried herbs - basil, parsley, oregano & rosemary
2 tbsp extra virgin olive oil
  1. preheat oven at 250C
  2. mix all salt, pepper, brown sugar, basil, parsley & olive oil in a small bowl. Set a side
  3. clean chicken & drain well, rub chicken with 2/3 part of olive oil mixture
  4. sliced potatoes, tomatoes & carrot in or cut to cubes
  5. sliced onion, loose up all onion rings
  6. put potatoes, carrot, tomato & onion into a bowl, season well with the remaining olive oil mixture
  7. line potatoes & onion on a roasting pan & lastly top with chicken
  8. roast for 45 to 50 minutes
  9. serve
