capsicum sausage fritatta 灯笼椒香肠煎蛋饼


Breakfast... having this colourful fritatta as our breakfast. Simple, yummy & fast.



ingredients: (serve 2-3 pax)
2 large eggs
chicken breast, cut small cubes
1/2 tsp light soy sauce
1/2 tsp cornflour
red capsicum, cut small cubes
fresh parsley, minced
salt & pepper
  1. marinate chicken with light soy sauce & cornflour, set aside (this will make the chicken meat tender) 
  2. heat non-stick pan with some oil
  3. stir-fry chicken, capsicum & parsley
  4. add in beaten eggs, turn to medium low heat, cover with lid for few minutes
  5. fry until both sides become light brown
  6. serve
