steamed soft tofu with dried shrimps gravy 虾米蒸豆腐


Steamed tofu always use soft tofu instead of hard tofu. So many types of tofu, I also got confused. Cooking tofu is always an easiest task for me. I like to put on some gravy or just a simple oyster sauce gravy would be tasty enough.
ingredients:

1 block of soft tofu
a handful of dried shrimps
2-3 cloves of garlic, minced
some spring onion, chopped
1/2 tbsp oyster sauce
1 tsp light soy sauce
some sugar to taste
  1. clean & soak dried shrimps with some water for 15 minutes or earlier
  2. steam tofu for 5 minutes or boil a bowl of water, remove from heat, let tofu sit in the boiling water for 5-10 minutes then drain & place on a plate
  3. drain dried shrimps, do not discard water, later use for the gravy
  4. heat a pan with some oil, fried dried shrimps until fragrant, dish out, set aside
  5. using the same pan, sautee minced garlic until fragrant
  6. add in soy sauce, oyster sauce & sugar, stir well
  7. immediate add in the "soaking water" & dried shrimps, stir until gravy become thicken
  8. finally add in chopped spring onion & off heat, pour it on top of the steamed tofu
