moist banana bread 香蕉蛋糕


This is a very tasty & moist banana bread, I try this new recipe and do some adds & minus here and there to suit my ingredients on hand. Also hope that the banana bread to turn out nice.


I do not smell any banana smell at the beginning of my baking but almost end of my baking, my house was full of banana smell! It takes me to bake this banana bread for 45 minutes even it was small loaf size. Anyhow, I love this banana bread, can't wait for too long, I cut out a slice of it and it was totally yummy! I also add some chocolate rice on one of the loaf and other one is just plain banana bread. My son love it so much, as soon as he woke up from his nap, he wanted to try it. Also, another reason was he was my helping hand on this bake.




ingredients: (make 2 x small loaf)

3 bananas, mashed (1/2 cup)
5 tbsp butter, room temp.
1/2 cup castor sugar
1 large egg
1/2 cup milk
2/3 tsp baking powder
1/2 tsp baking soda
1-1/2 cup all purpose flour
2 tbsp cornflour
1/2 tsp salt
  1. preheat oven at 190℃
  2. sift flour, cornflour, baking powder, baking soda & salt, set a side
  3. mix sugar & butter with a mixer until pale & fluffy
  4. add mashed banana, egg & milk, mix to combine
  5. slowly add in sifted flour mixture, beat until all combine and smooth
  6. pour batter into loaf pan, bake for 40 minutes or inside a skewer and pull out clean
  7. serve after cooled
