homemade mustard greens pickles 酸芥菜


Make your own mustard greens pickles at home is so easy, also is safe to eat. No chemicals most of all if compare with those at the store. I do not use any rice water, just salt & sugar. It taste good to cook mustard green pickles soup and mustard green pickles with fried fish.


ingredients:
4-5 medium size mustard green 芥菜
2/3 cup coarse salt
1 tbsp brown sugar
1 tbsp normal white sugar

 
clean mustard greens with water & drain, drain under the sun until dry about a day

combine & mix salt & sugar in a bowl


 

in a big bowl, rub the mixture of salt into each layer of mustard greens, until all become watery like picture shown.

DAY 1
put all mustard greens in a clean jar (out of any grease & dry), i put some stone on top of it to press down the mustard green so that it will sink and cover by the salty water.

DAY 2




DAY 10




DAY 10, can make soup & ready to cook!!
Actually on day 7 was ready, remember clean your hand before pick the mustard greens, if not it will contaminated and grow fungus, then you should throw away the whole batch. Try out with 1 or 2 mustard green at first for your first try.
