stir-fried bitter gourd with black beans 豆鼓炒苦瓜


Another bitter gourd dish in our list - stir-fried bitter gourd with black bean paste. It is a vegetarian dish, very simple and nice to eat. I also use our organic home grown bitter gourd to cook this dish.

The texture of the cooked bitter gourd was a bit crunchy, if you like a softer texture you may add some water and cover it for a minute or two during the stir-fried.

Don't forget to remove the inner white membrane of the bitter gourd, most bitter is come from this membrane.

ingredients & method:-

1 medium size bitter gourd, thinly sliced
1 tbsp preserved black beans
2 cloves garlic, minced
some minced ginger
1 tsp light soy sauce
1 tsp sugar

  1. chop preserved black beans into small pieces
  2. heat wok with some oil, add in minced garlic, ginger & black beans, sautee until fragrant
  3. add in sliced bitter gourd, stir-fry for 1-2 minutes
  4. add in light soy sauce & sugar to taste
  5. stir-fry another 2 minutes & serve
