pickled olive with vegetables 橄榄菜炒蔬菜



This is a colourful dish also very delicious to serve with rice. Chinese describe it as 下饭菜 means you can eat few bowls of rice with this single dish. It was easy, just chop all the ingredients and stir-fry with this "pickle olive".
This is how "pickled olive" looks like, not related to any olive but just mustard green leaves. I have no idea why it named to that???? But anyway, it did taste good for the stir-fried and also good on fried rice.

 

ingredients and method:-
5-6 pcs baby corn
6 long beans
1 medium red capsicum
1 medium carrot
3 cloves garlic, minced
2 shallots, minced
2 tbsp pickled olive
1-1/2 tsp light soy sauce
1/2 tsp sugar

marinate:
1/3 cup minced pork
1/2 tsp corn flour
1/3 tsp light soy sauce
pinch of white pepper

  1. cut baby corn, long beans, capsicum & carrot into small cubes
  2. heat pan with some oil, saute minced garlic & shallots until fragrant
  3. add in marinated minced pork, stir-fry until half cooked
  4. add in pickle olive, stir and mix well with pork
  5. add in veges cubes, stir-fry until all vegetables is half cooked
  6. while stir-fry, add in light soy sauce & sugar
  7. continue stir-fry until all veges & pork is cooked
  8. serve with a big bowl of rice!!
