stuffed bitter gourd 釀苦瓜


This is another way to cook bitter gourd - stuffed bitter gourd with pork & fish paste, serve with fermented soy bean paste as dipping sauce. Eat more bitter gourd is good for our body as bitter gourd can cool down our body especially when we ate a lot of fried food.



 

ingredients & method:-

1 medium size bitter gourd
200g ready made fish paste
100g ground pork
chopped spring onion
1/2 tsp salt
1/4 tsp sugar
1 tbsp water

  1. cut bitter gourd into 2cm thick rings, clear all seeds
  2. combine & mix fish paste & ground pork in a bowl until the paste become sticky
  3. add in salt, sugar & spring onions
  4. final add in 1 tbsp water, combine well and ready to stuff into bitter gourd
  5. heat pan with some oil, add in stuffed bitter gourd and let it pan-fry for 1 minute and flip to other side and cook for another minute. The surface of the paste will be lightly brown but not fully cooked. Set aside.

the gravy or dipping sauce:-

2-3 cloves garlic, minced
1/2 tbsp fermented soy bean paste
1 tbsp light soy sauce
1/2 tbsp oyster sauce
2-3 tsp sugar
1/2 cup water
1/3 cup potato starch water ( 2 tsp potato starch mix with 1/3 cup water)
** it can be substitute with cornstarch or tapioca starch
  1. heat pan with some oil, add in minced garlic. Sautee until fragrant but not brown
  2. lower heat & add in remaining ingredients but not include water and starch water into the pan
  3. mix well then add in 1/2 cup water, bring to boil
  4. add in stuffed bitter gourd, cover pan for 2-3 minutes
  5. open cover, slowly add in starch water until the sauce become thicker
  6. serve
