braised pork belly 红烧肉


Most demanding dishes of my family ....
braised pork belly! The fat will be melted in your mouth and the meat was tender & juicy! I can have 2 bowls of rice with this single dish! No kidding!

ingredients: (serve 3 person)
1 strips of pork belly
1 inch ginger (sliced)
4 cloves of garlic - crush
2-3 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp Shaoxing wine
rock sugar / brown sugar
2 star anise
3 bay leaves
1 stick cinnamon
a pinch of peppercorn
salt
hot water

  1. cut pork belly into cube like above
  2. boil a bowl of water
  3. pour 1 tbsp of oil on the wok,add ginger & garlic
  4. add in rock sugar let it slowly melt until become caramel
  5. add star anise, bay leaves, cinnamon & peppercorn
  6. add in pork belly cubes, stir fry to almost cook
  7. add soy sauce, oyster sauce & shaoxing wine, stir fry to combine
  8. add hot water to cover all pork, high heat to boil
  9. cover with lid, turn to low heat & let simmer for 45 minutes
  10. past 45 minutes, turn to high heat to reduce the sauce until thicken
  11. add salt to taste, serve!
