Purple Series #2 - Purple steam buns 紫薯椰丝包


Purple series #2...
Purple sweet potatoes steam buns, colour was not bold but love it because it turn our soft & nice.

The right bottom was the ugly one because had drips of steamed water on it. 
Remember to put a cloth on the lid when steaming.

ingredients: (make 12 buns)

300g all purpose flour
3 tbsp steamed purple sweet potatoes
40g sugar
1-1/3 tsp active dry yeast
1 tbsp shortening / veg. oil
150 - 165g water - depends on the sweet potatoes moisture

  1. combine all ingredients in a mixing bowl
  2. knead dough by hand until smooth, about 10 - 15 mins, proof dough, rest 20 mins
  3. knead dough again until dough become smoother than earlier
  4. cut into portions, add fillings & shape
  5. put shaped buns into steamer, let fermented another 20-30 mins
  6. start steaming from room temp. water, high heat until start boiling then change to medium heat. Total steaming 20 mins from cool to end. 
  7. after times up, turn off heat, let buns stay in steamer for another 2 mins (so the buns wont shrink)
  8. remove buns from steamer after 2 mins, cool on wire rack!
