Purple sweet potatoes steam buns, colour was not bold but love it because it turn our soft & nice.
The right bottom was the ugly one because had drips of steamed water on it.
Remember to put a cloth on the lid when steaming.

300g all purpose flour
3 tbsp steamed purple sweet potatoes
40g sugar
1-1/3 tsp active dry yeast
1 tbsp shortening / veg. oil
150 - 165g water - depends on the sweet potatoes moisture

- combine all ingredients in a mixing bowl
- knead dough by hand until smooth, about 10 - 15 mins, proof dough, rest 20 mins
- knead dough again until dough become smoother than earlier
- cut into portions, add fillings & shape
- put shaped buns into steamer, let fermented another 20-30 mins
- start steaming from room temp. water, high heat until start boiling then change to medium heat. Total steaming 20 mins from cool to end.
- after times up, turn off heat, let buns stay in steamer for another 2 mins (so the buns wont shrink)
- remove buns from steamer after 2 mins, cool on wire rack!
