kampung fried rice 乡村炒饭





This is a typical Malay fried rice that you can find in Malaysia - at any Malay food stall. It use water spinach, anchovies, eggs as main ingredients but most importantly is the use of garlic, shallot and anchovies blends that makes this fried rice fragrant and special.


ingredients: (serve 2-3 pax)

2 cups cooked rice
1/2 cup anchovies, washed and drained
1 stalks of water spinach (kangkung), cut to 1 inch length
2 eggs
3 cloves garlic, minced
4 shallots, minced
salt, sugar & white pepper to taste


 




 
  • blend anchovies first, pour out in a bowl/plate.
  • then blend garlic & shallots (add some water) with a blender, set a side
  • crack & beat eggs in a bowl


 
  • fried eggs, set a side
  • pour a tbsp of oil into a heated work, add blended garlic & shallot
  • sautee until fragrant but not brown



 
  • add blended anchovies, sautee until anchovies turning light brown
  • add water spinach


 
  • add cooked rice
  • add seasoning, salt, sugar & pepper
  • add in fried eggs
  • stir fry until all combine, serve
