ingredients: (serve 2-3 pax)
2 cups cooked rice
1/2 cup anchovies, washed and drained
1 stalks of water spinach (kangkung), cut to 1 inch length
2 eggs
3 cloves garlic, minced
4 shallots, minced
salt, sugar & white pepper to taste
- blend anchovies first, pour out in a bowl/plate.
- then blend garlic & shallots (add some water) with a blender, set a side
- crack & beat eggs in a bowl
- fried eggs, set a side
- pour a tbsp of oil into a heated work, add blended garlic & shallot
- sautee until fragrant but not brown
- add blended anchovies, sautee until anchovies turning light brown
- add water spinach
- add cooked rice
- add seasoning, salt, sugar & pepper
- add in fried eggs
- stir fry until all combine, serve
