salted fish fried rice 咸鱼炒饭



Had a busy day, what to cook? First thing in my mind is  - fried rice! My favorites cook dish, one pot, easy and fast! Hahaha... 


Waste no time to prepare this quick meal. But had to plan in earlier, so you can cook the rice first. Seldom cook rice in a day earlier, but cook at the same day also very much tasty! Just add a little less water to cook the rice.

ingredients: (serve 2-3 pax)
2 cups cooked rice
3 large eggs
12 long beans, diced
1 small carrot, diced
salted fish, diced
3 cloves garlic, minced
3 shallots, diced
1 fish cake, cut to small cubes
1/2 tbsp oyster sauce
1/2 tbsp soy sauce
salt & pepper to taste


  1. heat wok with some oil to fry eggs. Cut eggs into small pieces with your wooden spatula, set aside.
  2. medium heat, add 1 tbsp of oil to fry salted fish until golden brown. Set aside.
  3. use the remaining oil to sautee the minced garlic & shallots.
  4. add in fish cakes, diced long beans & carrots, stir fry until all cooked.
  5. add cooked rice & eggs, stir-fry all to mix evenly.
  6. add seasoning, oyster sauce, soy sauce, salt & pepper, stir fry & mix thoroughly for another 5 minutes.
  7. garnish with the crunchy fried salted fish on top of your fried rice.
  8. serve.
