This is my very first success steamed cake that I ever make for years.
I had been try many attempts on making this steam cake, but always fail. Sometimes the cake doesn't open "flower" like this and sometimes also have "white" in the middle of the cake. Don't know why but I keep on trying out for days and finally found my own recipe of this fluffy, chewy cake. Just like the same brown sugar steamed cake that I tasted when I was young at hometown. Really happy of my success of this trial!
ingredients:- (makes 3 muffin size cake)
50g dark brown sugar
10g sugar
120g hot water
50g rice flour
60g AP flour
20g cornflour
½ tsp baking powder
¼ tsp baking soda
- dissolve dark brown sugar & sugar with hot water. set a side to cool.
- sift all dry mixture.
- add little by little flour mixture into brown sugar water.
- stir batter until smooth.
- put more water to steamer, high heat bring to boil.
- pour batter into muffin pan until 90% full.
- steam 15 minutes.
- immediate open steamer lid once times up.
- cool to serve.
