Sugar Butter Buns 奶油糖小面包




Long long time didn't have time to make bread. I have to make it so just grab everything on the table and start the bread making on 3pm. (a bit too late huh?)


Ingredients: (make 9 small buns)

250g bread flour
4 g instant yeast
35g egg (balance of the egg + 1 tsp water for egg wash)
140g milk
30g caster sugar
38g butter
3g salt

Fillings:

100g butter
1/2 tsp salt
1 tsp all purpose flour
some course sugar
*method: combine all except sugar and put into freezer for 30 minutes. Cut into 9 cubes.

  1. Combine yeast, egg, milk and sugar then add in bread flour in a bowl. Combine well.
  2. Take out the dough and place on a working surface and knead by hand until all combine for about 5 minutes.
  3. mix butter and salt together then add into dough. Knead until smooth. Takes about 20 - 30 minutes.
  4. Grease the bowl with butter or oil. Shape dough into ball shape and place in bowl. Cover with damp towel and let proof for 1 hour or double in size.
  5. Remove dough and pouch out the air of the dough. Divide dough into 60g/portion. Roll and shape into balls. Let dough rest for another 15 minutes.
  6. Flatten dough in round shape. Place the butter cube and seal it up and place on a greased pan.
  7. Let dough proof for the second time for an hour.
  8. Brush egg wash on the proof dough. Use a scissor to cut at the middle and place some course sugar on it. Sprinkle as many as you like if you love a sweet bun!
  9. Bake on preheated oven at 190C for 20 minutes.
  10. Remove bread immediately from pan and let cool on a wire rack.
