This is a new favorite fried chicken in our family. This is a famous dish in Malaysia, especially you can enjoy it in most of the malay or mamak restaurant. Now we not need to go out there but can enjoy it at our home!
I always wanted to cook this "ayam goreng berempah" long time ago but didn't get the ingredients on hand until few days ago finally bought it back home. This is my very first time to cook this but I am very satisfy about it.
I cook another vegetable dish after fried this chicken by using the same oil & spices which stick on the pan. No waste and this dish need curry flavor oil.

ingredients: (4 pcs of chicken)
4 pcs chicken
5 shallots
5 cloves garlic
3 sticks lemongrass
1 inch ginger
2 tsp coriander powder
2 tsp fennel powder
3 tsp curry powder for chicken
2 tsp salt
pinch of pepper
3 stacks of curry leaves
ingredients: (4 pcs of chicken)

3 stacks of curry leaves
- blend shallots, garlic, lemongrass & ginger into paste.
- add coriander, fennel powder, curry powder, salt & pepper into the paste & mix well.
- marinate chicken with the spice mixture evenly at least 2 hours.
- heat oil to fry chicken, once oil heated, turn heat to low medium.
- add curry leaves into pan with chicken, fry chicken one side about 10 minutes.
- turn chicken to other side for another 10 minutes.
- serve with rice & spiced cabbage!
