ginger and egg fried rice 姜蛋炒饭

This is the easiest fried rice ever although is not presentable but very delicious! Just use 3 main ingredients, rice, ginger and eggs!

Super fast to prepare and my family love it so much especially I cook this during rainy days! This kind of fried rice is specially cook for new mommy on confinement month. Is a "heat-ty" dish, so if you are not on confinement you may try not to add in much ginger and sesame oil when you cook this fried rice.

Ingredients: (serve 2 pax)

cooked rice (prefer overnight rice)
1 inch ginger (sliced)
2 large eggs (I use 3)
1 tsp cooking oil
2 tsp sesame oil
1 tsp light soy sauce
salt & pepper to taste

  1. heat wok, pour cooking oil and sesame oil then add sliced ginger. Saute until fragrant.
  2. add eggs, add seasoning like salt & pepper, fry eggs until light brown, use cooking spatula to cut eggs into small pieces.
  3. add cooked rice, stir fry all ingredients together.
  4. add light soy sauce, salt & pepper, stir fry until all combine.
  5. serve!
