ginger onion beef kuey teow/hor fun 姜葱牛河




We had this dish at a night store at Section 17, Petaling Jaya. Love it very much. So I decided to try it out at home. I almost got it at the same taste! My son love this dish, he ate quite a lot today.



Ingredients: (serve 2 pax)

(A)

120g Hor Fun / Kuey Teow
1 tbsp light soy sauce
1/2 tsp dark soy sauce
2 tbsp cooking oil

(B)

Beef (cut to thin slice)
1 tbsp cornstarch + 2 tsp light soy sauce

(C)

1 tsp cooking oil
1 onion (cut to size)
1 part ginger (sliced)
spring onion (cut to 2 inches length size)
3 cups chicken stock
2 tbsp potato starch + 3 tbsp water
1 tsp salt
1/2 tsp sugar
1 tsp oyster sauce
   
 

  1. (B) Marinate beef with cornstarch & light soy sauce. Set a side.
  2. (A) Put Hor Fun in a bowl, add in light soy sauce, dark soy sauce & 1 tbsp cooking oil. Mixed well.
  3. (C) Prepare potato starch & water. Set a side.
  4. heat wok with 1 tbsp cooking oil in high heat. Add Hor Fun and stir fry quickly until a bit soft. Take out Hor Fun and set a side in a plate.
  5. heat wok again with 1 tsp cooking oil, stir fry onion and ginger for a while, about 1 minutes.
  6. add chicken stock and bring to boil.
  7. add salt, sugar & oyster sauce in the wok. Stir well.
  8. pour in mixed potato starch water slowly and bring to boil.
  9. lastly, marinated beef and spring onion. Cook for 10 second. Do not cook too long, it may harden the beef. Off heat.
  10. pour gravy to fried Hor Fun and serve!
