I call this cake is Light Fruitcake because it is less buttery but still very rich in rum flavor cakes. It is very suitable for those who want to eat a cake with less calories and in diet.
Ingredients:
50g raisins
50g golden raisins
50g mixed fruit
Dark Rum
15g flour
200g all purpose flour
1/2 tsp baking powder
Pinch of salt
120g butter (room temperature)
100g sugar
2 large eggs
1 1/2tbsp milk
2 tbsp dark rum
1 tsp vanilla extract
- put all raisins, golden raisins, mixed fruit into a jar and pour over some dark rum and mixed well. Close cover and keep in cool place for 3 days. Keep in refrigerator if keep for longer.
- take out the mixed fruit jar and let it cool in room temperature.
- drain marinated mixed fruit and toss with 15g flour. Set a side.
- preheat oven at 170C.
- cream butter and sugar until light and fluffy. Add milk, rum and vanilla. Mixed well.
- sift flour with baking powder and salt. Divide into 2 parts.
- add one egg and add one part of flour into butter mixture. Mixed well at low speed with your mixer.
- add another egg and last part of flour. Mixed to well combine.
- pour in all the coated mixed fruit into the batter.
- turn batter into a loaf pan and bake for 45 minutes or until a wooden skewer come our clean.
- transfer pan to a rack for cooling.
