chinese peanut pancake 慢煎糕




This is a chinese peanut pancake, very common in here as breakfast or as a snack to eat.

It needs a very even and low heat to cook this pancake. Next time I should try to use my induction cooker to make it and experience the final result compare with my stove.


ingredients: (makes 4  x 20cm pancake)

1 cup all-purpose flour
1-1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp fine sugar
1/4 tsp salt
1 large egg
1 cup water
2 tbsp oil

4 tbsp sugar
4 tbsp cooked crushed peanut



  1. mix & combine flour, baking powder, baking soda, sugar & salt in a mixing bowl
  2. make a well at the flour mixture, slowly add in egg, water & oil
  3. whisk batter until smooth & let sit for 10 minutes or more
  4. low heat, heat non-stick pan with some oil
  5. pour 1/3 cup batter into pan
  6. wait until some bubble appear
  7. spread 1 tbsp sugar on the half cook pancake
  8. then spread 1 tbsp crushed peanut on the pancake & cover with lid, let cook about 1 minute
  9. flip pancake to half and let cool on a rack
