Thanks for my mom's recipe. I called her up on the same morning before I cook this dish. This dish is very easy to make, just need time to braise the meat to tender. My husband loves it very much!
Braised pork ear & intestine is not as popular as old time, maybe a lot of people is much concern about their cholesterol level now. But tasty food always have more cholesterol, so we only have it once in a blue moon. Haha.
Ingredients A:
1 set of Pork Ear (include face and nose... butcher will give you the whole piece)
2 pcs of Pork Intestine (prefer double insert)
4 cloves of garlic (minced)
1 shallot (minced)
Ingredients B:
1 tbsp soy bean paste
1 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp sugar
1 tsp salt
1 bay leaf
3 dry cloves
1 tsp cinnamon powder
1 star anise
1 dry chili (for hotter taste can add more)
- soak ingredients A into hot water on stove, you may cut the size you want after soaking process. Set aside.
- heat 1 tbsp of oil into pan, saute minced garlic & shallot until fragrance. Then put in the balance of ingredient B.
- put in Pork ear & intestine into pan and fry with all the spices.
- add in water until all cover up the meat and in medium heat for 1 and a half hours. Remember to stir frequently to avoid meat stick on the pan.
- switch off the stove and leave for 1 hour. (cover pan)
- before serving, heat up to simmer & turn to low heat for another half an hour.
