thai style pineapple fried rice 泰式黄梨炒饭




Very tasty rice but unfortunately the nut is a bit dark... haha.. Now I can enjoy my own Thai style pineapple fried rice at home!


Preparation is very simple, yet another easy dish to cook.

Ingredients: (serve 2-3 pax)
2 cups rice
1 tsp turmeric powder
3 cups water

8 medium size shrimps (shell and devein)
chicken meat (sliced)
1 onion (sliced)
2 pcs of can pineapple (cut to cube)
12 cashew nuts (roasted or fried)
3 eggs
A handful of golden raisins
1 tsp light soy sauce
salt and pepper to taste

To cook the rice: (prefer cook the rice at least 1 hour earlier before fried the rice)



1.   wash rice and drain. Pour 3 cups of washed rice into rice cooker.
2.   add in turmeric powder and mix well. Press button to cook rice.


Method:


             
1.   fry the cashew nuts instead of roast it. Pour 3 tbsp of cooking oil into wok, heat up and put in cashew nuts to fry. Stir frequently, mine had one side dark, I forgot to stir it and head up to do other things. :) Cashew nuts will be cook once become golden brown. Drain well and set a side.

2.  stir fry chicken & shrimps seperately, set a side.
3.  put in onions & pineapple to stir fry. Drain well and set a side.

4.  beat eggs in a small bowl, add salt to taste. Pour eggs into heated wok and fried.

 
5.  add in cooked rice and fried constantly. Then add light soy sauce, salt and pepper  to taste.
6.  pour all cooked cashew nuts, onion, chicken, shrimps, pineapple & raisins into rice and mixed well.
